Bone in pork loin weighs 18 lb per loin. The loins cost $3.50 per lb. There is a loss of 3 lb per loin for bone and trim. One-third of the remaining loin is lost through cooking. Five (5) loins are packed per case. There is a catered event for 500 guests and each guest receives 8 oz of cooked boneless pork loin.
